Pair with Blackstone Sauvignon Blanc
3/4 pound fresh cooked lobster meat, small diced
1/3 cup mayonnaise
(1 large) 3 tablespoons fresh lemon juice
1/4 cup finely chopped shallot
2 tablespoons finely chopped fresh tarragon
Pinch sea salt and freshly ground black pepperb
5 cups torn Boston lettuce leaves (from about 1 head), washed and dried
Combine lobster, mayonnaise, lemon juice, shallot, tarragon, salt and pepper in a large bowl.
Divide lettuce equally on salad plates and top with lobster salad.
